Al Mare will be destination restaurant in the heart of Knightsbridge, it infuses an exquisite Mediterranean coastal cuisine with modern flavours in a refined and inviting atmosphere. With plates designed for sharing, Al Mare is the perfect backdrop for living unforgettable moments and creating lifelong memories.
The Carlton Tower Jumeirah has an exciting opportunity for talented and passionate Chef de Partie to perform their craft in our luxurious hotel. The main duties and responsibilities of the role are:
To organise and set up the assigned section of the kitchen and prepare dishes as efficiently as possible to increase speed and maximise productivity.
To ensure that all dishes are prepared consistently and according to standard recipes.
To prepare list of product/food items required for the next day and submit to the Chef in charge.
To prepare list of tasks for mise en place for the chef on the following shift before going off duty.
To always control the quality of the product you use and report any discrepancy to the Chef in charge to ensure consistent freshness and quality.
To constantly maximise the quality and presentation of dishes
To monitor food and operating costs and control these by reducing waste.
To instruct and demonstrate methods of production in your relevant department.
To ensure all items are properly labelled and dated to allow for correct stock rotation.
The successful candidate will have the following experience and skills:
Have a passion for your work and the ability to innovate, with a proven track record within luxury environments
Have the ability to operate in a diverse and luxury environment
Be a self-motivator and someone who is ready to challenge in the interest of continuous improvement
Excellent communication skills
Excellent level of English
You will have a flexible approach with the ability to work day, night and weekend shifts
Be friendly, approachable and professional
